There are many different ways of making easy and quick egg muffin, for this recipe I made the egg muffins with chorizo, bacon and onion. But you can add any other food depending on your preference and diet.

Making easy and quick egg muffin is a good way to save time in the mornings, as you can prepare more than one portion and all it takes is 25 minutes.
You can cook it the night before, or prepare it cold the night before and put it in the oven when you wake up.

Prep time: 5 mins                  Cooking time: 20minutes

This recipe is for 12 easy and quick egg muffins. Portions for men 4 egg muffins/meal, women 3 egg muffins/meal.

Ingredients:

  • 50g Spanish chorizo / Hungarian sausage
  • 50g bacon lardons
  • ground paprika spice
  • 1 small chopped onion
  • 1tbsp of goose fat

(You can add any other ingredients to your easy and quick egg muffin, such as red peppers or other veg, cheese and any spice you fancy. Also, you can use coconut oil or other alternative fats for cooking. I used goose fat as I am on a REG-ENOR detox diet where vegetable fats are to be avoided.

Directions:

  • Preheat oven to 175 degrees C/350 degrees F. Lightly grease 12 muffin cups, or line with paper muffin liners.
  • Chop onions and chorizo to small pieces.
  • Beat eggs in a large bowl. Stir in onion, salt, pepper. Mix in sausage and bacon. Spoon into muffin cups up to 2/3rd full.
  • Bake in preheated oven.
  • Check in 18-22 minutes. (Insert knife near the centre, if it comes out clean, it’s ready.)
  • Add some fresh vegetables on the side and enjoy your yummy, healthy, quick and easy egg muffin! 🙂
